Eggnog Cheesecake Omelet (yes, really!)

I know you all have been waiting FOREVER for something new... and I admit to you that I have purposely not been posting omelet's because I do not want to continue to repeat myself over and over. Absence makes the heart grow fonder, so they say.

I am posting in real time, meaning, I am typing this BEFORE I have made this omelet. At this exact moment in time, I haven't a clue what this omelet will taste like, what exactly I am going to put in it, or if it will even resemble something edible at all. I am headed towards the kitchen to embark on an (assumed) unprecedented journey of (potential) omelet genius.

If I don't survive this experiment, know that I love you all.

Eggnog Cheesecake omelet

eggnog (splash)
milk (splash)
cream cheese (2 Oz)
vanilla (splash)
sugar (1 tsp)
cinnamon (dash)
nutmeg (dash)
crushed candy cane
2 eggs

First soften cream cheese in microwave and add sugar. Whip with fork until fluffy and set aside. Crack eggs into bowl and add splash of eggnog...whip then check consistency. If thick, add a splash of milk as well. Add vanilla, nutmeg and cinnamon. Whip and cook as you normally would. The omelet WILL brown so don't be alarmed... cook it up proper. On the flip spoon cream cheese mixture into omelet, fold and garnish with crushed candy cane. Then NOMS. And noms you will...


No salt, no pepper...sugary happiness this morning!

So far, so good... looks ok to me!


I selected a mint chocolate candy cane.. fresh from the Christmas tree!



And then I beat the crap out of it!!!


It is cooking normally! OoOoOoOo....

Wow. All kinds of WOW. It is really and truly PHENOMENAL. This IS the flavor of Christmas, and nothing (and I really mean nothing) I have ever made has tasted so decadent. I must say that is it RICH, too rich to even finish. This is not a breakfast, this is a dessert to be shared with your loved ones on a cold and snowy Christmas Eve. Make this omelet and share it with your besty this Holiday Season. Make it a tradition.

Seat of my Pants Omelet

I woke up starving this morning...not terribly unusual but I was craving comfort food like NO other. Tuna Casserole, specifically. Yes, I am an odd duck, and it is not out of the realm of normal for me to whip up a casserole in  the wee hours of the morning. BUT Baby Dalton has had other plans since 5 am, so I didn't even get the chance to ponder breakfast until 9 am.  I opened the old fridge and just started pulling out all the things that looked good, quickly cooked up this little gem and quickly scarfed it down in anticipation of yet another infant outburst. Motherhood rules.

Seat of my Pant's Omelet

Stouffers Mac and Cheese
canned chicken
celery
onions
green bell pepper
Parmesan cheese
salt and pepper to taste
Basic Omelet

Chop up celery, onion and bell pepper to desired size. Place in pan, salt and pepper to taste and saute until they reach your desired consistency. Then add your chicken and saute with the veggies. When warmed, add the mac and cheese and Parmesan cheese, lower heat to medium low and allow to melt/warm up slowly. Set aside. Prepare basic omelet, add filling and fold. Sprinkle with a little more Parmesan and NOMS.



Saute your veggies and they will buy you Christmas presents! Yeah! REALLY!



The rest of the ingredients waiting patiently... GAWD I love Stouffers mac and cheese!

My Review:

This was SO reminiscent of my favorite casserole I almost burst into tears when I took my first bite. I am really sorry that I keep forgetting the flavor value of celery... like an old childhood friend it brings everyone together for good times. I vow to bring celery back more often!

Manicotti Omelet

Manicotti and omelet's have an awful lot in common. They are both delicious. They both have eggs as an ingredient. They are stuffable. They are aesthetically pleasing. So it is only natural to substitute one for the other. Even with this comparison I was still slightly trepidatious about  this omelet... it seemed unnatural somehow. Like I was doing something naughty...and with Christmas so close I didn't want to ruin my chances for getting a Wii Fit from Santa (believe me when I tell you, I am in desperate need of anything with the word "fit" in it.)  So I went against my better judgement and made this crossover dish. I hope you enjoy!

A few tips for this omelet:  use fresh ingredients. Provolone cheese typically comes in slices when purchased off the shelf.. you may have to go to your deli and have them cut off a hunk so you can shred it yourself. Ricotta cheese can be substituted with a low-moisture cottage cheese as well. Also, any sauce will do... meatless or otherwise!

Manicotti Omelet

Ingredients:

Spaghetti "meat" sauce
provolone cheese (shredded)
mozzarella cheese (shredded)
Parmesan cheese (fresh/shredded)
ricotta cheese
parsley flakes
black pepper
Basic Omelet

Shred all shreddable cheeses if not already in that format. You will only need about 1 tbsp of each. Add to a microwave safe dish along with about 1/4 ricotta. Season with parsley and pepper to taste. Set aside. Start your Basic Omelet, and while cooking it warm up your cheese mixture in microwave.  I suggest using short increments of time and stirring in between. Set aside and then warm up your meat sauce. On the flip, spread cheese mixture onto omelet and fold. Sprinkle another small amount of Parmesan on top, and spoon meat sauce on top of omelet. Allow to sit for a few minutes to allow cheese mixture to blend. NOMS.


A whole lotta cheese for just a tiny little omelet!



Mmmm.. fresh white dairy happiness.



The mixture is loath to spread... so be delicate!



A little extra Parm... because you can never have enough of that!



My meat sauce has brought my husband to tears before. Or maybe that was when I kicked him in the shin? Eh, no matter. It's dang good.

My Review:

I would gladly replace pasta with an omelet any day of the week. I thought the texture would be off-putting, but the opposite was true. The slight saltiness of the omelet made this taste almost better then the real thing. A must try...

Back to Basics... Denver Omelet!

WHERE THE H-E-Double Hockey Sticks have you been JOEE?  HMMM??? What's your AWESOME excuse now? Alien invasion? Spending quality time with your toaster?  YES all of those thing!  Ummm... herm... ehhh.. *ahem*.. sure!! Actually, I am a Mom (yes, they let me reproduce!) and not JUST a Mom... a Mom to 3 boys. I don't think I need further explain.. that pretty much says it all! OK OK... maybe I was just a TEENSY bit over the omelet? No need for concern though... absence makes the heart grow fonder, indeed.

I am sure that if you have ever attended a breakfast at any American style restaurant you have seen the "Denver Omelet" on the menu. It is a classic... a universally accepted taste sensation. The beauty of the Denver omelet is in it's simplicity... ham, cheese, onions, potatoes, and green bell peppers. I was gonna rename it, make it my own. But I know I couldn't fool anyone... the Denver omelet is simply too popular. So enjoy this Western classic!

Denver Omelet

Ingredients:

green bell peppers
onions
ham
potatoes
salt and pepper to taste
olive oil
avocado
Basic Omelet

Chop up onion and peppers and potato to preferred size. Warm up about 2 tbsp. Olive oil in 12 inch skillet... add the veggies and brown until desired texture/taste (HINT: This omelet does well with a crunchier textured onion/pepper.)  Chop ham and place in pan with potatoes/onion/peppers. Stir until warmed and slightly browned. Set Aside. Prepare basic omelet, on the flip add cheese and filling. Fold, and top with hearty slices of avocado. YEEEHAWWW!!  Denver comes to life in your mouth!!


Ohh the Ham was forgotten... the Ham was crying.


 Oilve oil... it looks like ALOT more then I put in! I swear!

SUPPORT LOCAL MUSIC!!!!

A few weeks ago I got to go see CLUTCH in concert. I ADORE Clutch and they were freaking incredible live!  But what surprised the hell out of me was this: 

INTERTWINED

This is a local band from here in Grand Junction, CO. Now I am an old lady and have seen my share of local music both here and in San Diego... local music is very hit and miss. You get one good band out of 50 garage bands, usually. INTERTWINED was one of those bands that REALLY capture your attention. I couldn't help but Jam along and even get a head bang or two in. They have a unique sound, outstanding music and lyrics I could *gasp* actually understand! Walking away from that concert I had determined that these guys are worth something!!! Heck yeah!

Fresh View Omelet...Leftover Series #3

Ahhh... that's the ticket. After days of carbs and calories and all things hip enhancing, it's refreshing to cook something on the lighter side. By now, your turkey has lost it's luster and more than likely it's appeal. And that white meat that was barely edible to begin with has now dried out to point you cannot swallow it without a gallon of milk and prayer. The goal for today's omelet is to freshen your view of turkey and learn how to re-animate it in a healthy and moist way! Lucky for us turkey is very forgiving. You may find that this recipe is similar to my Chick-Chick Bean omelet, however I assure the taste is completely different thanks to the fresh, home canned tomatoes and fresh bell pepper and onions.

AND! I get to introduce to you my absolute favorite cheese ever, Muenster! Muenster is a softer, milder cheese in comparison to cheddar. It is a North American spin off of the french "munster" cheese. You can read all about the the history HERE.   It is soooooo smooth and sooooo dang good. But really not shreddable, so I wouldn't try if I were you. Thin slices will be just fine!

Fresh View Omelet...Leftover Series #3

Ingredients:

turkey (white meat)
Fresh canned tomatoes
bell pepper
onion
diced green chiles
garlic salt
chili powder
salt and pepper
Muenster cheese
black olives
corn
Basic Omelet

Chop onions and bell peppers and saute in small pan. Set Aside. Place fresh tomatoes with some juice into large skillet and heat on medium-high. Season as desired. Add chile's and continue to bring to simmer. Chop turkey to desired size and place in simmering tomatoes. Add corn and onion/bell pepper mixture. Cover and simmer until all juices have been absorbed, uncover and remove from heat. Slice your cheese. Prepare your basic omelet and when flipped lay cheese down, top with filling and fold. Top with sliced black olives.NOMS, the fresh way!



Fresh canned 'maters. If you don't have any, you are SOL till next summer... but I bet you are gonna be canning next year ;)


The color is not enhanced here... that is how bright and beautiful it really is.

KITCHEN STAFF UPDATE:



Sous Chef Dalton has now begun an intensive 7 month training program to fill the NOW available position of Master Food Taster.


He is off to a great start... and the Omelet kitchen believes he has immense potential.


After nearly  a month of holding the Food Taster position, Everit has not even so much as taken a bite of one omelet. Therefore, he has been demoted to dishwasher. Everit is "thrilled about the new position" and feels it "suits his energy level better." We could not agree more, and applaud Everit for his positive attitude!

My Review:

The turkey was amazing... tender, melt in your mouth, and extremely flavorful. All the ingredients stood alone in their own right, yet came together in such an awesome garden fresh flavor! I feel alive again!

Stuffed Up Omelet... Leftover Series #2

No No, this omelet does not have a cold. It's just all stuffed with stuff and stuffing and stuff. Ya know.. stuff. Like, stuff stuff.

I have to tell you that my leftovers are dwindling quickly... I aced the mashed potato's cuz they just passed up their prime. And I finished of the stuffing. I do, however, have loads of turkey left. So the next few days it will be turked-out omelets. And will NOT include anything else Thanksgiving related. Because I am over it...

Stuffed Up Omelet

Ingredients:

(mostly leftovers)

potatoes (I used cubed/fried)
Mac and Cheese
stuffing
gravy
breakfast sausage (patties)
Basic Omelet

Brown your sausage and set aside. Warm up your leftovers all together. Be sure to get your Mac and Cheese nice and hot, as this is the "cheese" in your recipe. Do up your omelet and add ingredients on the flip, preferably Mac and Cheese side down. Flip and cover in gravy. Have a large appetite for this one!

Served with a fresh, juicy pear. NOMS.


This is halfway through, and where I stopped. Even my voracious appetite could not conquer this one. Or I am totally over leftovers. Or maybe because I ate 2 of these:


BONUS RECIPE!!!!


These are fine little appetizers my husband calls "croissandles." Passed on from my friend Jennifer Paris. They are decadent and compliment all meals, but none better than breakfast!

Ingredients:

1 Roll Pillsbury Croissants (I use the big size ones)
1/2 roll Jimmy Dean breakfast sausage
1/2 package cream cheese
6 small squares cheddar cheese

Brown sausage till completely done, chopping with spatula until it is fine. Add cream cheese to pan, turn to low-medium heat and melt cream cheese with sausage until they are together as one. Add one piece cheese onto your rolled out Croissants (see package) and spoon mixture on top of cheese. Roll up and fold in the sides. Bake according to package directions. DIVINE.



You should eat this... really.

My Review:

Even though breakfast sausage brought this half dead filling to life again, I am really over the whole Thanksgiving feast. I really did not enjoy this omelet enough to hoot and holler over it. But it was better then being reheated and stuck on a plate. The Croissandles on the other hand were NOMS and that's what made me smile this morning!!!
