Wow, I really need to grocery shop omelet Day 1!
I would have shared a pictures, but someone came by and ate it!
I had:
some chopped green onions
little leftover taco meat
raw spinach
garlic in bottom of veggie drawer
part of a red pepper
really dry cheddar cheese
touch of sour cream
little plain yogurt
hot sauce
1 egg, part of a carton of egg whites
Put the spinach, garlic, red peppers and green onion in the batter. Used yogurt instead of milk.
Put taco meat in and cheddar in middle. Topped with a little yogurt mixed with sour cream, hot sauce and more green onions.
Very yum!

Guess what!??!?! I just put it in an omelette this morning!! I was going to take a picture but it was so good I couldn't stop eating, lol. I put salt and pepper into the egg batter, and the stuffing included: brown rice, ground turkey, shredded cheddar cheese inside and on top of the omelette, and ketchup drizzled on top!! SO good, thanks for inspiring a foodie like me :) Also, Salsa was used as a topping!

my fav btw is to fry finely cubed taters with onions....italian spice, garlic, and i tiny bit of chili powder to taste....add bacon crumbles and parmesean cheese, putin as filling and top with shredded pepperjack....fold and enjoy! suggested by Texas Goat.
READER OMELET SUBSTITUTIONS:
So in an effort to not look like a house I made a more diet friendly version of this one. :) I used 3 egg whites and 1 egg yolk, fat free beans, 2% cheese, and fat free sour cream. I am sad to say I also ditched the the crunchy toppings :( But over all this was still delicious! Submitted by Tiffany, in response to the Omeleto Refritos
