Chili Cheese Omelet

The simplicity of this omelet is really what makes it to special to me. For those of you who were already concerned about my sanity, please disregard the following diatribe: This omelet in particular floods me with emotion. It reminds me of growing up. Just me and my Mom, on our own. She was essentially a single Mom just doing her best to raise her daughter. And much like we go through now, there were days when money was tight and food was scarce. You did the best you could with what you had. My Mom had this amazing ability to create the most delicious food with practically nothing on hand... and this omelet was one of my absolute favorites. A can of chili, a little cheese and a few eggs and we ate like queens. I love you Mom! Thanks for doing all you did!!!

Chili Cheese Omelet

Basic Omelet

Whip up the omelet, throw it in the pan. Warm up chili and cheese. Stuff, fold, noms. Make a memory with your kids today!


Just some leftover Hormel and a little shredded cheese!

Well if you read the beginning then I need not even review it. You already know how I feel about this omelet. I really liked the addition of the nacho cheese, a little extra spice is always nice!

"I'll Have the #3" Omelet.

Super sized. Hold the pickles. And the onions. And the mayo. And the lettuce. And the tomato. In fact, just mash it all up, throw it in an omelet and call it good. Very, very good.

I'll have the #3 Omelet

Ingredients:

Leftover cheeseburger (or turkey burger!)
Leftover Tater tots
American Cheese
Ketchup
Mustard
Basic Omelet

Throw the chop down on your burger. Smash up the tots. Throw in the microwave. Start burning that omelet and when you have flipped that sucker, toss a few slices of cheese down and stuff it to the gills. Fold, plate, squirt some ketchup and mustard on it. Wrap it up in some parchment paper, throw it in a paper sack. Get in your car, drive to the nearest parking lot and then NOMS, dropping everything on your lap and all over your seat. You forgot the napkins, so use your kids sweater in the back seat to clean up your mess. You are thirsty. You realize someone forgot your soda. Drive back home and demand it, free of charge. Put the lid on wrong so when you pick it up it pulls off dropping the entire cup onto your floorboard, on your dash, and into the little crevices not even microscopic soda eating bacteria can fit into. Curse loudly. Run back in the house to change your clothes. Throw a towel on the wet seat and go on about your day.


One of these things look a little out of place!

I put too much milk in the mix.. see the edges, how scrambly and ugly they are?


When you use too much milk this is what happens on the flip. SO close to a scramble I shivered a little.

Nothing a little cheese can't repair though!


Like every other red-blooded American, I take my super sized #3 with a DIET Pepsi! Of course!

My review:

I have made this omelet SO many times. It is one of my absolute favorites! BUT today, thanks to a suggestion by Deniz, one of my loyal readers, I added ketchup for the first time. And some mustard too, as this is my normal burger moisture of choice. It is exactly what it had been missing all along! It was excellent.. not to surprising flavor wise... it tasted exactly as expected! But that's what I was shooting for, so GO me!

Philly Cheese Steak Omelet

I outdid myself this time! Cheese steak is one of my many weaknesses. And along with a rich taste, comes a rich history, which you can read HERE.  I would have given my eye teeth to have some soft bread to go with this. But eggs were a comparable substitute. At least I keep telling myself that.

Without further ado:

Philly Cheese steak Omelet

roast beef
provolone cheese
green bell peppers
onions
Olive Oil
Basic Omelet

Chop up your peppers and onions chunky style. Saute in pan with a small amount (1/2 tsp) of olive oil and a little black pepper. You will want to do a light saute, meaning still a bit crunchy (a good guideline for this is when you start to smell it strongly its done!) Meanwhile, cut or hand shred your roast beef into thin chunky pieces. Top with provolone and set aside. When veggies are done place on top of roast beef and cheese and place in microwave. Start your omelet, and while cooking microwave your filling until the cheese is gooey and melty. On the flip, add filling and fold; top with a little more cheese, if you please!

Not too many ingredients today...don't let that fool you into thinking there is less NOMS!

My meat looks so good I almost thought  professional snuck in!


This filling looks JUST as good out as it does in!

My review:

NAILED IT. Exactly the flavor I was shooting for. I think even Philly would be proud of this one! Veggies were perfect... meat was tender, cheese was melted to absolute righteousness. RAD people, just RAD.

All American Omelet

What is the first image that came to your mind when you read that title "All American?" I would put money down that you conjured up a vision of sitting at a baseball game waving a blue and red pennant and munching on a hot dog. Or perhaps, you envisioned a succulent, steaming apple pie cooling in the window at your Grandmother's house. Or a giant slice of watermelon dripping down your child's hand as they run circles around the picnic table at your Fourth of July family reunion. Let me tell you what I see when I think of "All American:" I think of a hearty meatloaf served with a heaping bowl of mashed potatoes and gravy. Biscuits and sweet peas swimming in a pool of butter entice the family to the table with eager anticipation.

Your family's meatloaf recipe is a personal as a dish can get. Your meatloaf recipe was handed down from Grandparents passed...tweeked and rejuvenated to fit the liking of the individual member's of your own immediate family. It is the ultimate comfort food. The most requested birthday meal. One could argue that this is the meal that is sure to bring every member to the table with a smile.

Reader's, get your meatloaf on tonight. And tomorrow relive the whole experience again by putting it in an omelet.

All American Omelet

Ingredients:

meatloaf
mashed potatoes
cheese
gravy
Basic Omelet

Prepare your basic omelet. While cooking, warm up your leftover meatloaf, potatoes and gravy. Cut meatloaf into small bite size pieces. On the flip, add cheese, meatloaf and mashed potatoes. Fold and smother in gravy. Sprinkle a little more cheese on top. Let your favorite meal become your favorite breakfast!

My Review:
The ultimate guilty pleasure. Adding eggs and cheese to my already favorite meal took it to another level of satisfaction. The sheer size and depth of the omelet left me full and fat and sassy. Perfect for a lazy Sunday.

Wow, I really need to grocery shop Omelet Day 1!

We have all been here...the day before payday. Supplies are running dangerously low. Toilet Paper is being rationed out square by square. You dug the old package of Crystal Light out of the back of the cupboard to have something other than water to drink. You may even be considering cleaning out the fridge, seeing as how there is nothing in it at the moment. Yup. The day before payday.

NOW HERE IS THE FUN PART! And where audience participation is key... I want all of you to reach deep into your cupboards and fridges and imaginations and make your own! I will list them all on the reader page! Pictures would be awesome too! Now get to COOKING!!!

Wow, I really need to grocery shop omelet.

Ingredients:

Shredded Cheese
1 slice American cheese
Ground Turkey (leftover) or whatever meat you can find that isn't past it's prime.
Diced potatoes and onions
Sour Cream
Basic Omelet

Cook your potatoes to your liking (or per package directions.) Prepare basic omelet. Heat up whatever you found and throw it in the omelet. Fold and cross your fingers. Top with something, anything. Approach carefully... and noms.

My Review:
I love these omelets the most. Mainly because this is exactly how this blog was born. Finding the last bits of food and making them into something you never thought they could be. This particular little number was a bit on the dry side, even with the sour cream. The turkey did not reanimate as well as hoped. But it was still delicious!
