Chili Cheese Omelet

The simplicity of this omelet is really what makes it to special to me. For those of you who were already concerned about my sanity, please disregard the following diatribe: This omelet in particular floods me with emotion. It reminds me of growing up. Just me and my Mom, on our own. She was essentially a single Mom just doing her best to raise her daughter. And much like we go through now, there were days when money was tight and food was scarce. You did the best you could with what you had. My Mom had this amazing ability to create the most delicious food with practically nothing on hand... and this omelet was one of my absolute favorites. A can of chili, a little cheese and a few eggs and we ate like queens. I love you Mom! Thanks for doing all you did!!!

Basic Omelet

Whip up the omelet, throw it in the pan. Warm up chili and cheese. Stuff, fold, noms. Make a memory with your kids today!

Well if you read the beginning then I need not even review it. You already know how I feel about this omelet. I really liked the addition of the nacho cheese, a little extra spice is always nice!

"I'll Have the #3" Omelet.

Super sized. Hold the pickles. And the onions. And the mayo. And the lettuce. And the tomato. In fact, just mash it all up, throw it in an omelet and call it good. Very, very good.

I'll have the #3 Omelet

Ingredients:

Leftover cheeseburger (or turkey burger!)
Leftover Tater tots
American Cheese
Ketchup
Mustard
Basic Omelet

Throw the chop down on your burger. Smash up the tots. Throw in the microwave. Start burning that omelet and when you have flipped that sucker, toss a few slices of cheese down and stuff it to the gills. Fold, plate, squirt some ketchup and mustard on it. Wrap it up in some parchment paper, throw it in a paper sack. Get in your car, drive to the nearest parking lot and then NOMS, dropping everything on your lap and all over your seat. You forgot the napkins, so use your kids sweater in the back seat to clean up your mess. You are thirsty. You realize someone forgot your soda. Drive back home and demand it, free of charge. Put the lid on wrong so when you pick it up it pulls off dropping the entire cup onto your floorboard, on your dash, and into the little crevices not even microscopic soda eating bacteria can fit into. Curse loudly. Run back in the house to change your clothes. Throw a towel on the wet seat and go on about your day.

I put too much milk in the mix.. see the edges, how scrambly and ugly they are?


When you use too much milk this is what happens on the flip. SO close to a scramble I shivered a little.

My review:

I have made this omelet SO many times. It is one of my absolute favorites! BUT today, thanks to a suggestion by Deniz, one of my loyal readers, I added ketchup for the first time. And some mustard too, as this is my normal burger moisture of choice. It is exactly what it had been missing all along! It was excellent.. not to surprising flavor wise... it tasted exactly as expected! But that's what I was shooting for, so GO me!

Egg roll Omelet

Cheating is generally frowned upon in this society. I cheated today. It felt a little dirty. I am still deciding whether I like that feeling or not. But, in my defense, I don't really have the luxury of making a delightful Asian meal. My children and my husband would not approve. I believe that would rather starve themselves if I threw some Kung-Pao on their plate. So I kinda HAD to cheat, right? RIGHT!  TOTALLY! YES!!!! Justification! HIYA!!!!

IF you had the pleasure of a Chinese food dinner last night, you of course can use any and all of the leftover's you have in your fridge. I will be jealous, it's true. But don't worry about me... I'll be fine.... *sigh*


Egg roll Omelet

Ingredients:

Egg rolls (pre-made, oven bake kind)
Sweet and Sour Sauce (the scary little packet that comes with the egg rolls)
Soy Sauce
Basic Omelet

Prepare your egg rolls according to the package directions. IF you were cool enough to make your own than I am jealous and want a recipe. When cooled enough to touch (but not cold), chop up into desired size pieces and slap into your omelet after the successful flip. Fold and drizzle with soy sauce, sweet and sour sauce, OOOH and some hot mustard if you have it. I don't. Wish I did. Bow out of respect to your creation, and NOMS.

My Review:

Meh. It was OK. I'm not gonna' make a stink over it. It lacked the flavor, spice, and everything I was really looking forward to. This just didn't really hit the spot like I thought it would. Stoked I get to snack on the rest of the egg rolls though!

Haute Florentine Mess Omelet

Eh, you know me. I can't just call it what it is. I gotta' jazz it all up and make it sound fancier! In all actuality, this omelet is pretty stinkin' fancy. But it's a breath killer! Don't eat this omelet on the board meeting day, people. You might knock the whole room out! Of course, then you wouldn't have to fight Jim from accounting for the Everything Bagel... perhaps this could work out to your advantage?


Haute Florentine Mess Omelet

Ingredients:

chicken
spinach
Parmesan cheese
mozzarella cheese
minced garlic
Alfredo (or other) cream sauce
olive oil
Basic Omelet

Wash and pat dry your spinach. Chop into small bite size pieces. You will need a very large amount of fresh spinach to make a small amount of cooked spinach. About 1.5 cups of fresh will yield appx. 1/4 cup cooked. SEE PHOTOS FOR SPINACH QUANTITY. Warm up small pan with about 1 tsp olive oil and about 1/4 tsp. minced garlic. When garlic begins to sizzle, add spinach and stir constantly until wilted. This will happen very quickly (about 30 seconds) so don't walk away! Remove from heat and set aside. Chop up your chicken and top with mozzarella and Parmesan cheeses. Put your cream sauce in a bowl ready to warm up in the microwave. Set both aside. Begin your basic omelet (I used 3 eggs today!) and when mixed well add the spinach/garlic mixture into the eggs. Pour in hot pan and cook as normal. While cooking warm up your filling and cream sauce. Flip, stuff, fold. Top with cream sauce and a little more Parmesan, for good measure. NOMS.



WELL BLOW ME DOWN!!  Agugugugugug!!!


You need very little oil and garlic to wilt your spinach.


This isn't a great pic to show the amount, but it is about 1 1/2 cups chopped up.


Wilted and ready to mix! See how much it cooks down? Spinach is CRAAAZY!


I just happened to have a leftover chicken breast from yesterday's soup. ALMOST as if I had planned it!

My Review:

What? This wasn't slow baked in an Italian restaurant for hours? Could have fooled my pallet! This was actually one of the best flavored omelets I have made to date. The garlic was bold but not overbearing. I was still able to taste each individual ingredient and enjoy their intertwining flavors. Had I been blindfolded and tried this dish there is NO way you could have convinced me it was not an actual pasta dish.

Alice in Wonderland Omelet

Chasing the rabbit into the hole made Alice very hungry. The rabbit's garden offered a fresh fare. "Oh!" Alice replied, "these mushrooms look amazing!" She plucked one from the garden and nibbled on the delicate little button. As she swallowed the flavorful little fungus her head began to spin. She collapsed onto the garden bed and fell unconscious slipping into a deep dream. In this dream she was in Joee's kitchen. She immediately noticed that the dishes were unkempt and the floor was scattered with bits of crumbs and a collection of hot wheels and monster trucks. Stepping around the toys she made her way to the refrigerator. She slowly opened the door, afraid of what may jump out from the cool shelves. Much to her delight there were no spooks...just a variety of foods that she instinctively knew would make an incredible breakfast. She selected a few items and began to cook as she had never cooked before. The kitchen came to life, seemingly of its own accord! The fork whipped the eggs without her hand, the mushrooms jumped into a cool bath to rinse themselves, and the avocado split itself in two in anticipation of being sliced. She began to conduct the edibles as if they were a practiced orchestra. The scene exploded into a Fantasia. Alice's mouth began to water. When the omelet delicately floated onto the plate she reached for a utensil to sample the wares... only to wake up screaming "It is MY omelet! It is MY omelet!." She was dirty and moist from laying in the rich earth. Her hair was matted from writhing in place. A hot tear rolled down her cheek as she shivered at the memory of the omelet she never had the chance to try. Alice decided that day she would never again trespass on a rabbit's garden.

Alice in Wonderland Omelet

Ingredients:

mushrooms
bacon
ham
Colby-jack cheese
Havarti cheese
avocado
Basic Omelet

Rinse mushrooms well. Pat dry and chop into chunks, setting a few aside for the topping.Crumble bacon, slice ham and (if needed) shred cheese. Slice avocado and set it all aside. Begin basic omelet and add the Colby-jack, ham, bacon and mushrooms. Flip and top with 1 slice Havarti cheese, sliced avocado and a few mushrooms. Noms and start trippin'!

Too much filling for a 2 egg omelet... but I stuffed it all in there anyway!

My Review:

The SHNOZBERRIES taste like SHNOZBERRIES!!!  I'm not sure what kind of mushrooms I used... should my carpet be moving?   Is that a blue dog using my toilet? 
Alright, Lewis Carrol nonsense aside, this was AWESOME. If you noticed I did not heat the filling and I am glad I didn't. The cool mushrooms contrasted beautifully with the warm eggs. It was almost like eating a chef's salad, minus the greens of course. Now if I could get this monkey out of my ear...

Blueberry Coffee Cake Omelet

So tomorrow you could pick up some dried out, crumbly deep frozen and defrosted again natty old coffee cake from your local coffee shop. OR you could take a few extra minutes and whip up this little delight and actually ENJOY your breakfast. It''s your choice...

Blueberry Coffee Cake Omelet

Ingredients:

(omelet)
Fresh, ripe blueberries
2 eggs
dash of sugar
dash of cinnamon
dash of vanilla

(topping)
butter (softened)
brown sugar
white sugar
flour
dash of cinnamon.

Prepare your topping first. (use the photo guide below to help with measurements because I didn't pay attention!)  Put softened butter in a small bowl. Add brown sugar and flour and mix together until crumbly. Dash with the cinnamon, set aside. **Note: I took a few tries to get the crumbly part right, I just kept adding little bits of flour and sugar until it was where I wanted it to be**  Now, for the omelet I used my Magic Bullet. If you don't have one you may need to use a food processor or hand blender or mash up the berries by hand. Place berries,eggs. vanilla, cinnamon and sugar in bowl (or mixing device.) Blend until desired consistency, making sure your eggs are mixed well. Cook as normal, keeping in mind your omelet will brown up to a french toast kind of brown! Fold and top with your sugar crumble topping. Allow to sit for a minute or so and watch the topping melt and glaze your omelet. You can also serve open faced, like a pancake! You won't believe how good this is....

About this much butter (1.5 tbsp, maybe?)



Started with this much brown sugar... ended up adding at least double that.


Started with this much flour. About doubled that as well.


This is too gooey! YOU Don't want this!

Arrghghg... A little chunkier than I had anticipated...


After FIRST flip. I actually had to do 3 flips total as it was rather gooey (thanks the the berry juice!)

Look at those berries just bleeding with sweet juice! Oh NOMS.

My Review:

Fantastic! It reminded me of a blueberry pancake more than a coffee cake..until I hit the melty gooey brown sugary topping, then I was in heaven. those hot blueberries absolutely ooze a sweet syrup making this a decadent treat! I implore you to replace ONE pancake breakfast with this omelet!
